My mom's mom was famous for a few of her traditional recipes. Basic, but passed on through the Converse Family and into our bellies and hearts forever. These oatmeal cookies are the best. I have never found a recipe to compete. Sweet and crunchy on the outside, but melt -in-your mouth soft inside.
I made them today on special request from a friend of the families, the main alteration is NO RAISINS. We always love extra raisins or cranberries added, but he asked for the Plain Jane version. I don't know if I should give away the secret recipe, but you can always try to come close with this one below.
Not-Quite-Nana's Oatmeal Raisin Cookies
(but you can try to come close)
2 Sticks of margarine or butter, softened
1 cup (firmly packed) brown sugar
1/2 cup sugar
2 eggs
1 tsp vanilla
1 cup raisins
1 1/2 cups flour
1tsp baking soda
1 tsp cinnamon
1/2 tsp salt
3 cups old-fashioned oats
Bake at 350 for 10-12 minutes until golden brown.
Beat together butter and sugars until creamy. Add eggs and vanilla; beat well. Add combined flour, baking soda, cinnamon and salt. Mix well. With a spatular or wooden spoon, stir in oats and raisins. Drop cookie dough in small scoops onto ungreased cookie sheet. Bake and cool on a cookie rack. Savor the deliciousness before they all vanish!!
